Ihre Aufgaben

Our this appreciated Swiss client, we are searching for a Japanese Head Chef for a Gault Millau award winning fine dining Japanese restaurant:

  • Management of Japanese Cuisine (hot galley), except Sushi Cuisine (there is a Sushi Chef taking care of it)
  • Insuring highest outstanding satisfaction
  • Implementation of hotel-specific quality standards, quality management 
  • Efficient control of product offers, delivery and efficient use of products, with a view to achieving optimum return on the kitchen
  • Compliance with hygiene regulations (inspection and execution) and cleanliness in the Megu kitchen
  • Creating menus
  • Creating recipes, preparing testing menues and price calculations
  • Control over compliance with the goods operations/product usage
  • Schedule/Work assignment and monitoring of execution
  • Checking of all meals that are sent from the Megu Kitchen
  • Order/Purchase in cooperation with the Executive Chef
  • Control of staff schedules (appropriate staff requirement, control of overtime) adjusted to the guest volume in collaboration with Exexcutive Chef and Sous Chef
  • Develop repair lists and purchase lists at the end of the season
  • International meetings on a regular basis

The successful candidate will lead a lean team of international, passionate, and dedicated culinary team members (up to 4 Chefs). The Japanese Head Chef, who will be working side by side with the Sushi Chef, should be able to start by middle of November 2019.

 

 

Anforderung /
Ihr Profil
  • Four years international experience as a Head of a fine dining Japanese restaurant 
  • Ability to create exciting new dishes while refining and elevating the signature dishes and best sellers further
  • Excellent leadership skills
  • Passionate, dedicated and creative
  • Track record in reputable and fine dining restaurants 
  • Ideally Japanese but may consider other nationalities 
  • Willingness to be based in Gstaad / Kanton Berner Oberland, Switzerland

Benefits

  • Competitive salaray (gross annual between 84.000 CHF to 91.000 CHF)
  • Permanent contract, unlimited (during low season other projects are being submitted to keep the Head Chef occupied)
  • Basic mandatory health insurance in Switzerland (each insured pays a monthly premium to the health insurance. In the event of illness, part of the treatment costs are borne by the insured. This co-payment consists of the franchise, the deductible, and acontribution to the costs of a hospital stay)
  • Relocation ticket: for verification during interview process
  • Accommodation, available billed through salary deduction: a monthly flat fee of CHF700/month is deducted from the salary
  • duty meals cost of CHF 297/month is deducted from salary (only when hotel is open)
  • Annual holiday benefit: 4 weeks paid holiday leave
  • Annual holiday ticket: 1 flight ticket to home country after 12 months of employment
  • Interview process: Pre-Interview with ILWIS, then initial video interview with hotel GM and Executive Chef; possible face to face interview and trade test for the final step
